Pizzelles

Pizzelles are the oldest cookie in the Italian baking tradition — and one of the most beautiful.

Made from a simple batter of flour, eggs, sugar, and butter, pizzelles are pressed between two hot irons that stamp them with intricate patterns. The result is a thin, golden, almost lacy cookie with a crisp snap and a delicate flavor. In Italy, they have been made since the 8th century. In Pittsburgh, they have been on cookie tables since the first Italian families settled here.

We make ours the traditional way: with real butter, real eggs, and a flavoring of anise or vanilla. The anise version has a subtle, licorice-adjacent warmth that pairs beautifully with coffee. The vanilla version is softer, sweeter, and more universally appealing.

Pizzelles are essentially mandatory on a Pittsburgh cookie table. They are also one of the most giftable cookies we make — light, elegant, and beautiful in a box.
